Broccoli Pizza Puff Spirals (Super Bowl Recipe) ~ Day 34


There is nothing much to say about these cute and delicious pizza rolls, except they are extremely easy to make and they will disappear in no time.  Make this fun appetizer for the Super Bowl and enjoy the game.

Preparation time: 10 minutes 
plus 30 minutes to thaw the pastry sheets
Cook time: 15 minutes
Serves: 6

Ingredients:
  • Puff pastry sheets - 1 pack, thawed
  • Ricotta cheese - 1 cup
  • Broccoli florets - 2 cup, finely chopped
  • Mozzarella cheese - 1 cup, shredded
  • Garlic - 1 clove, finely chopped
  • Dried basil - 1/2 tsp
  • Dried oregano - 1/2 tsp
  • Olive oil - 2 tbsp
  • Red chilli flakes - to taste
  • Salt - to taste


Method:
  1. Preheat oven to 400 degrees F.  Line  baking sheet with parchment paper.
  2. In a small mixing bowl, combine ricotta cheese, basil, oregano and salt.  
  3. Mix garlic in 2 tbsp olive oil.
  4. Brush garlic oil in one of the pastry sheet.  
  5. Spread the ricotta mixture evenly on the sheet.
  6. Next, sprinkle broccoli and red chilli flakes.
  7. Top it with mozzarella cheese.
  8. Take one end of the pastry sheet, roll to the other end.  Pinch the ends together.  Cut into 4 slices. 
  9. Place the slices cut side down on the baking tray and repeat the process with the rest of the sheets.  
  10. Bake until golden brown, about 15 - 20 minutes.  
  11. Serve hot.

Broccoli - Snake Gourd Stir Fry with Black Channa



Ingredients:

Broccoli Florets - 1 Cup
Snake Gourd - 1 Cup ( cut into small pieces)
Black Channa - 1 Cup (Soaked over night and cooked till tender)
Mustard seeds - 1 tsp
Broken red chillies - 3 or to taste
Urad dal - 1 tsp
Turmeric powder - 1/2 tsp
Asafetida - a pinch
Fresh coconut - 2 tsp
Salt - to taste
Oil - 2 tsp

Method:

Heat oil in a wide pan and add mustard seed to splutter.  Add the broken red chillies and urad dal and fry till golden brown.  Add broccoli, snake gourd, turmeric powder, asafetida and salt.  Mix well.  Cover the pan and cook the vegetables until tender.  Alternatively, you can also cook the vegetables in the microwave for 4 to 5 minutes, then add it to the tempering.  Now add the cooked black chine and saute for 2 minutes.  Add the fresh coconut and mix well.  Serve hot.

Broccoli - Panner Masala

Ingredients:

Cubed Panner - 1 cup
Broccoli - 1 cup cut into florets
Onion - 1 roughly chopped
Garlic - 2 cloves
Tomato paste - 2 TBSP
Garam masala - 2 tsp
Red chili powder - 2 tsp
Turmeric powder - 1/4 tsp
Heavy cream - 1/2 cup
Kasori Methi -1 tsp
Salt - to taste
Oil - 2 TBSP


Method:
  1. Grind the onion and garlic with little water in to a smooth paste.
  2. Heat oil in  a pan and add the ground onion-garlic paste and fry for 2 minutes.
  3. Add tomato paste.  Add a cup of water and mix well.
  4. Add the garam masala, red chilli powder, turmeric powder, kasori methi and salt.
  5. Now add the cut broccoli and mix well.  Cook till the broccoli is tender.
  6. Add the heavy cream and let it come to a boil and add the panner.  Cook on low heat for 1-2 minutes or untill the gravy thickens. 
  7. Serve hot with pulav, roti or naan.
