Mini Samosa Bites ~ Day 83

Ingredients: 

  • Potatoes - 2, boiled and mashed
  • Mixed vegetables (peas, carrot and corn) - 3/4 cup
  • Cumin seeds - 1 tsp
  • Ginger - 1/2 tbsp, minced
  • Garam masala powder - 1 tsp
  • Coriander powder - 1/2 tsp
  • Red chili powder - 1/2 tsp
  • Anardana (pomegranate) powder - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Cilantro - 2 tsp, finely chopped
  • Salt - to taste
  • Oil - 2 tsp
  • Green and sweet chutney
  • Mini fillo cups - 1 box





Method:
  1. Heat oil in a skillet.  Add cumin seeds ad ginger.  Saute for 10 seconds.
  2. Add the mixed vegetables, coriander, turmeric, garam masala, red chili, and anardana powders along with salt.  Stir well and cook the vegetables until soft.  Add the mashed potatoes and cilantro.  Mix well.
  3. Preheat oven to 350 degrees F.  Place the fillo cups in a baking tray and bake it for 5 to 7 minutes.
  4. Fill fillo cups with the potato mixture.
  5. Serve with sweet and spicy chutney or ketchup.
